Learn the easiest ways to cook black pudding in a frying pan, oven or air fryer, plus serving ideas and important pack-instruction advice.
Black pudding is quick to prepare, but the best method depends on the product, slice thickness and whether it is supplied ready cooked. Always follow the instructions on the pack first. The aim is usually to heat it thoroughly while developing a browned outside without drying out the centre.
Choose your pudding from our Black Pudding collection before using the guide below.
Pan-frying is the classic method because it gives you direct control over browning. Slice the pudding to the recommended thickness, heat a frying pan over a medium heat and add a small amount of oil only if needed. Cook until the first side is browned, turn carefully and finish the second side. Heat thoroughly before serving.
Avoid using very high heat. The outside can catch before the middle is hot.
The oven is useful when cooking several portions at once. Arrange slices in a single layer on a baking tray and cook according to the temperature and timing on the pack, turning if the producer recommends it. This method gives a more even finish and reduces the amount of attention needed at the hob

Place the slices in a single layer with space for air to circulate. Use the pack instructions as your starting point and check early because air fryers vary significantly. Turn the slices if needed so both sides brown evenly.
Often very little oil is needed because black pudding contains fat of its own. A lightly greased pan can help prevent sticking, but adding too much oil can make the exterior greasy.
Follow the producer’s guidance. Many retail black puddings are already cooked during production and are reheated before eating, but you should never assume that applies to every product. Heat it thoroughly and use the storage and cooking instructions on the label.
For breakfast, pair it with square sausage, tattie scones, bacon and eggs. For a starter or dinner dish, black pudding works well with scallops, apple, potatoes or roasted vegetables.

Only if the product instructions say you can. Otherwise thaw it safely in the refrigerator before cooking. Never leave it at room temperature to thaw for extended periods.
Some products can be reheated in a microwave, but you will not get the browned exterior that frying, grilling or air frying produces. Follow the pack instructions.
Follow the manufacturer’s advice and normal food-safety guidance. Reheat only as directed and make sure it is thoroughly hot.
