What is Scottish chippy sauce?

In and around Edinburgh, “chippy sauce” usually means a thinner, tangy brown sauce served over chips and fish suppers. Recipes vary, but brown sauce and vinegar are commonly used. Gold Star is one of the best-known names connected with this Scottish chip-shop tradition.
